Salmonella–Free Eggs
In case you haven’t followed the news, American shell eggs have been found to harbor a consistent level of Salmonella enteritidis.  This proves to be a problem when:

• you eat undercooked eggs, such as soft boiled, poached or lightly fried eggs
• you eat sauces or dressings that use undercooked eggs, such as Caesar dressing
• you eat baked goods that are slightly undercooked, such as soufflés.

Well, weep no more.  We believe that because fowl pest disease wiped out significant portions of the poultry flocks in the Netherlands in 2003, Salmonella free eggs became available in grocery stores here.  Look for Salmonella vrij on the label.

The “little lights route” is a commemorative event in Eindhoven beginning on the 18th of September, the date when Eindhoven was liberated by the U.S. 101st airborne division, and lasting three weeks.  As with religious holidays, some secularization has taken place, which while making it less commemorative, heightens the interest for children.  Each year, every lamp post along a many kilometer route through the city receives a light display.  For one block the display will be the same, but the colors of the lights will change: stars, butterflies, killroy, parachutes.  The Xtreme amongst us bicycle but the rest drive it after dark, and if you go on opening night, you may catch commemorative events in the heart of Eindhoven and elsewhere, including parades, bands, tents, etc.  It’s like slow burn fireworks.
